Cooking Over Firewood x Rice Steamed in Earthenware Pots

FORK & KNIFE Miyajima is pursuing the power of nature by cooking over firewood, a culinary technique that has set the world alight. Flames are an essential element of natural gastronomy worldwide, bringing aroma and life to enhance the inherent flavours of ingredients.
Using a rice polishing machine installed in the kitchen, the technique of cooking over firewood is combined with careful cooking of freshly polished rice in earthenware pots to deliver an exceptional, unique taste experience.

Ryo Ishihama

Ishihama-san, previously sous-chef at Michelin-starred French seafood restaurant "abysse", works here as Creative Director. As founder and owner-chef, he also runs the "PEZ" seafood bistro Tokyo's Oku-Shibuya foodie district. In Hiroshima, Ishiyama-san serves dishes that draw out the full potential of local ingredients.
